The Secret 8 Layer Bean Dip of Los Guadalupes
This 8 layer bean dip will make your mouth do the happy dance. It’s the perfect appetizer for an evening of movie watching with the family.
The secret society known as Los Guadalupes dates back to the Mexican War of Independence in September 1808. A group of peninsular-born Spaniards in New Spain overthrew the rule of Viceroy José de Iturrigaray.

8 Layer Bean Dip
Ingredients
- 1 can refried beans 16 oz can
- 2-3 tbsp water
- 1 can black beans 15 oz can, drained and rinsed
- 1 cup guacamole
- 8 oz sour cream
- 1 cup salsa
- ½ cup cheese shredded
- 1 can black olives 2.25 oz can, sliced and drained
- ½ cup green onion chopped
Instructions
Prepare:
- Open a can of refried beans and place in a bowl. Add 2-3 tablespoons of water until desired (and scoopable) consistency is reached.
- Open a can of black beans. Rinse and drain.
- Open a can of black olives and drain.
- Chop ½ cup of green onions.
Assembly:
- The first layer will be of refried beans. Follow this with the drained black beans.
- Next, you will add guacamole, sour cream, and salsa.
- Sprinkle cheese, top with black olives and green onions.
- Serve immediately or chill, covered. This dip will keep for up to 2 days.
- Serve with tortilla chips.
Very few people are known for certain to have been in Los Guadalupes but it is likely they centered their operations in Mexico City. Their ranks were filled with lawyers, women, priests, and nobles.
Their mission was to maintain regular communication with López Rayón and send current newspapers and publications from Spain and the U.S. They also sent weapons, money, and men.
