Trout Fishing and Grapefruit Beer

Several Arizona State Parks offer fantastic trout fishing in rivers, streams, lagoons and lakes throughout the state. These amazing opportunities are made possible every fall through spring with rainbow trout supplied by the Arizona Game and Fish Department.

Arizona trout fishing destinations are diverse and beautiful, begin your search for an Arizona rainbow at Dead Horse Ranch lagoons, Dankworth Pond, Fool Hollow LakeRoper Lake, and Patagonia LakeVerde River Greenway and Oak Creek at Slide Rock State Park.

Now that you have your Trout, let’s cook them up on a cast iron skillet.

Fried Trout with Grapefruit

This recipe combines trout and some veggies with grapefruit beer.

Ingredients
  

  • 4 6-ounce trout fillets
  • 1 large grapefruit
  • 4 cloves garlic minced
  • ¼ cup sweet peppers diced
  • ¼ cup onions diced
  • ¼ cup tomatos diced
  • 3 tbs celantro chopped
  • 1 stick butter
  • 1 tbs Four Peaks Grapefruit Radler

Instructions
 

  • In a large cast-iron skillet, melt the butter over medium-high heat.
  • Add garlic and onions, and cook until slightly brown.
  • Place the trout, skin-side-down, in the skillet.
  • Add the sweet peppers, tomatoes, squeesed grapefruit juice and Four Peaks Grapefruit Radler.
  • Cook the trout, spooning the butter from the bottom of the skillet over the fish often, until just cooked through, about 5 minutes. Don’t flip the fish.
  • Transfer the fish to a serving plate.
  • Remove the skillet from the heat and scrape up any browned bits from the bottom of the pan. Spoon the pan sauce over the fish. Top with the cilantro and garnish with grapefruit slices.
